Red Thai Curry Salmon with French Fries

Enjoy the vibrant flavours of Red Thai Curry Salmon, paired with crispy McCain French Fries. Tender salmon is coated in a rich, aromatic curry sauce, while golden fries add the perfect crunch to complete this quick and satisfying dinner. A deliciously easy way to bring bold flavours to your table!

INGREDIENTS

2 salmon fillets

1 ½ tbsp red curry paste

100ml coconut milk

75g sugar snap peas

4 spring onions

Splash light soy sauce

Salt and pepper

250g McCain Air Fryer French Fries

METHOD

  • Preheat both air fryer drawers to 200ºc/400ºf. Mix together in a jug the coconut milk and ½ tsp of curry paste with a splash of soy sauce.

  • In the centre of a large piece of greaseproof paper on top of a sheet of tin foil, lay out the salmon fillets and brush 1 tbsp of the red curry paste all over the salmon. Fold up the sides of the greaseproof paper and tinfoil to make a parcel shape and throw in the sugar snap peas and the white part of the spring onions (save the greens for garnish!) then pop into the preheated air fryer basket.

  • Pour this into your pouch and fold the top edges closed so it is nearly sealed shut but there is a small hole open in the middle.

  • Air fry for 5 minutes and then pour your McCain Air Fryer French Fries into the other basket of your air fryer and cook for 5 minutes, shaking halfway through.

  • Unwrap your salmon parcel and taste the sauce for seasoning. Add in a pinch of salt if needed and serve up a salmon fillet per person with some McCain Air Fryer French Fries on the side and the sugar snaps and spring onions. Slice up the greens of the spring onions for garnish and spoon over the coconut milk sauce!
