Coconut Prawns with Bang Bang Sauce

Bring a taste of the tropics to your table with Coconut Prawns, paired with McCain French Fries and a zesty Bang Bang Sauce. Quick, easy, and bursting with flavour, this recipe is the ultimate combination of indulgence and convenience, making it perfect for any occasion.

INGREDIENTS

150g raw king prawns

3 tbsp plain flour

1 tsp garlic granules

1 tsp onion granules

1 tsp cayenne pepper

1 tsp dried basil

½ tsp chilli flakes

Salt and pepper to taste

1 tsp garlic granules

2 eggs

75g desiccated coconut

75g panko breadcrumbs

75g mayonnaise

1 tbsp sweet chilli sauce

1 tbsp hot chilli sauce

1 lime, zested and 1/2 juiced

200g tenderstem broccoli

2 spring onions, sliced for garnish

1 red chill, sliced, for garnish

Salt and pepper to taste

250g McCain Air Fryer French Fries

METHOD

  • Preheat the air fryer to 200ºc/400ºf. In a large mixing bowl, whisk together the plain flour, salt and pepper. In another dish, whisk the egg with the dried herbs and spices. Season the egg mix well with salt and pepper then set aside. In a large bowl or dish mix together the panko breadcrumbs and desiccated coconut.

  • Tip the prawns into the mixing bowl and coat in the flour then pass them through the spiced egg mixture. Shake off the excess egg and, using your hands, transfer to the bowl of panko and coconut. Press the coconut onto the prawns so it sticks.

  • Tip the prawns into the air fryer basket and spray with oil. Air fry for 4-5 minutes until the coconut and panko is toasted on the outside and the prawns are cooked, turning halfway.

  • At the same time as the prawns, drizzle the tenderstem broccoli with oil, salt and pepper and air fry for 5 minutes if you can fit the broccoli in alongside the prawns, or you can do it after.

  • When the prawns go into the air fryer, in the other basket pour in the McCain Air Fryer French Fries and cook for 5 minutes, shaking halfway. This recipe is perfect, because everything cooks at the same time!

  • While everything is in the air fryer, in a small bowl mix together the lime zest and juice, mayonnaise and chilli sauces. Season to taste with salt and pepper.

  • Serve up the prawns, tenderstem broccoli and the McCain Air Fryer French Fries with plenty of the spicy bang bang mayo and a sprinkle of sliced spring onions and chopped chilli.
