Creamy Boursin Chicken & Chips

Creamy boursin chicken and McCain Home Chips. A chippy cheese perfection to add to your family favourites this dinner time

INGREDIENTS

4 Chicken thighs

1 tbsp olive oil

150g cherry tomatoes

100g broccoli, chopped (include the stalk for extra flavour)

1 pack Boursin Truffle (150g)

100ml single cream

1 tsp dried oregano (optional)

Zest of half a lemon (optional)

400g of McCain Home Chips Straight

METHOD

  • Preheat the oven to 200°C (fan).

  • Arrange the chicken on a baking tray. Drizzle with olive oil, season with a little oregano, chilli flakes and pepper.

  • Place the whole Boursin in the centre of the tray with a splash of single cream. This will become your creamy, truffly sauce base as it bakes!

  • Scatter the cherry tomatoes and broccoli in between and around the chicken.

  • Bake for 30–35 mins until the chicken is golden and cooked through, the tomatoes are soft and blistered, the broccoli is tender, and the Boursin has melted down into a luscious, spoonable sauce.

  • Serve hot, spooning the creamy Boursin sauce over everything. Pair with crispy McCain Home Chips (cooked separately) for dunking and scooping.
