Chipmas Nachos

Nachos, but make them Chipmas.

Swap the tortilla chips for crispy McCain Home Chips and arrange them into a festive Chipmas wreath, piled with leftover Christmas turkey, crumbled stuffing and plenty of melted cheese. Finish with cool sour cream, fresh tomato salsa and a little red chilli for a festive sharing dish with a kick.

Perfect for Boxing Day, Twixmas or using up Christmas dinner leftovers, Chipmas Nachos turn what's left from the big day into something completely different a festive sharing wreath made for the middle of the table.

INGREDIENTS

  • 250g leftover cooked turkey, shredded

  • 200g leftover stuffing, crumbled

  • 150g cheese, grated

  • 250g fresh tomato salsa

  • 250g soured cream and onion dip

  • 1 red chilli, finely chopped, optional

  • Fresh coriander, to garnish, optional

METHOD

Get the oven ready

Preheat your oven to 220°C (or follow the temperature guidance on the McCain Home Chips pack).

  • Cook the chips

Preheat the oven and cook the McCain Home Chips according to the pack instructions until almost golden and crispy.

Spread the chips in a single layer and use two baking trays if necessary to give them enough room to crisp up.

  • Load them up

Shortly before the end of the cooking time, carefully remove the chips from the oven.

Scatter the shredded turkey and crumbled stuffing evenly over the chips, followed by the grated cheese. If you fancy some heat, sprinkle over some of the finely chopped red chilli.

  • Get everything hot and melty

Return the loaded chips to the oven until the turkey and stuffing are piping hot throughout and the cheese has completely melted.

Keep an eye on the chips as they finish cooking – you want plenty of gooey melted cheese while keeping that all-important crunch underneath.

  • Build your Chipmas wreath

Carefully arrange the loaded chips around the edge of a large round sharing board or platter to create a festive wreath shape, leaving a space in the centre.

Spoon or dollop some of the soured cream and onion dip and fresh tomato salsa over the wreath, then place bowls of the remaining dips in the centre, ready for everyone to dunk their chips.

  • Finish your Chipmas Nachos

Scatter over the remaining fresh chilli and coriander, if using.

Bring your Chipmas Nachos wreath straight to the table and let everyone dig in while it's hot, cheesy and ready for dipping.

Recipe tips

  • Add sour cream after cooking. Keep it cool and creamy by adding it once the loaded chips come out of the oven.
  • Don't drown them in salsa. Add a little to the platter and serve the rest alongside for dipping. This keeps the chips crisp for longer.
  • Spread the toppings around. Nobody wants to reach the bottom of the platter and discover all the good stuff was eaten from the top.
  • Serve immediately. Like all good nachos, these are best when the base is crispy and the cheese is still hot and gooey.

Variations

  • Christmas Leftovers, Nacho Style

There are only so many turkey sandwiches one person can eat.

Chipmas Nachos take some of those classic Christmas dinner leftovers and give them a completely different personality. Turkey and stuffing become the loaded nacho toppings, crispy chips replace tortilla chips, and melted cheese brings everything together.

Then cool salsa, sour cream and fresh chilli cut through those rich festive flavours.

The result is an easy Christmas leftovers recipe that doesn't feel like you're simply eating Christmas dinner all over again.

  • Make Your Chipmas Nachos Your Own

Think of this recipe as a starting point for whatever you've got left in the fridge.

Got some pigs in blankets hanging around? Slice them into bite-sized pieces and add them with the turkey. Leftover roast peppers, sprouts or other vegetables can all join the platter too.

For more of a classic nacho feel, add black beans, sliced jalapeños or sweetcorn before the cheese goes on.

If your crowd loves spice, add extra fresh chilli or serve sliced jalapeños on the side. If you're feeding people who prefer things milder, leave the chilli off the main platter and let everyone add their own.

  • Make Your Chipmas Nachos Vegetarian or Vegan

Christmas leftovers look different in every household, so Chipmas Nachos are easy to adapt to whatever was at the centre of your festive table.

For a vegetarian version, replace the turkey with crumbled leftover nut roast or chopped vegetarian Wellington. Both work brilliantly with the stuffing, melted cheese, salsa and sour cream while keeping that Christmas leftovers feel.

Keep the grated cheese and sour cream, choosing vegetarian-friendly products where required.

For a vegan version, try vegan nut roast, mushroom Wellington, black beans or spiced mushrooms in place of the turkey. Use vegan stuffing, a melting plant-based cheese and dairy-free soured cream, then finish with tomato salsa, chilli and coriander.

Check the labels of your chosen ingredients to make sure they're suitable for your dietary requirements.
