Chipmas Dinner

Got a fridge full of Christmas dinner leftovers? Give them a second helping with Chipmas Dinner a festive loaded chips recipe that turns some of the best bits of Christmas dinner into one big sharing wreath.

Crispy McCain Home Chips are arranged into a festive Chipmas wreath and topped with melted mature Cheddar, shredded turkey, crumbled stuffing and sprouts, with hot turkey gravy in the centre for dipping and a sweet cranberry sauce drizzle to finish.

Perfect for Boxing Day, Twixmas or using up Christmas dinner leftovers, it’s an easy way to transform yesterday’s roast into something everyone can gather around and pile into.

INGREDIENTS

  • 200g mature Cheddar, grated

  • 250g leftover cooked turkey, shredded

  • 200g leftover stuffing, crumbled

  • 200g cooked Brussels sprouts, shredded

  • 200ml leftover turkey gravy, thoroughly reheated

  • 150g cranberry sauce

METHOD

Get the oven ready

Preheat your oven to 220°C (or follow the temperature guidance on the McCain Home Chips pack).

  • Cook the chips

Preheat the oven and cook the McCain Home Chips according to the pack instructions until golden and crispy.

You may need to divide the chips between two baking trays to give them enough room to cook evenly.

  • Make them cheesy

When the chips are cooked, carefully remove the trays from the oven and scatter the grated mature Cheddar evenly over the top.

Return the chips to the oven for a few minutes, until the cheese is melted and deliciously gooey.

  • Heat the Christmas leftovers

While the cheese is melting, thoroughly reheat the turkey, stuffing and sprouts until piping hot.

Heat the leftover turkey gravy thoroughly according to food-safety guidance and pour it into a small serving bowl.

Gently warm the cranberry sauce in the microwave in short bursts until it loosens slightly and is easy to drizzle.

  • Build your Chipmas Dinner wreath

Place the bowl of hot turkey gravy in the centre of a large round serving board or platter.

Carefully arrange the cheesy McCain Home Chips around the gravy in a festive Chipmas wreath, then scatter over the hot shredded turkey, crumbled stuffing and sprouts.

  • Finish and serve

Drizzle the warm cranberry sauce over the wreath for a final festive touch.

Bring your Chipmas Dinner wreath straight to the table, with the hot gravy in the centre ready for dipping or pouring, and let everyone dig in.

Recipe tips

  • Don't overcrowd the chips. If you're cooking the full 1kg, use two trays if necessary so they have enough room to crisp up.
  • Get your leftovers piping hot. Reheat the turkey, stuffing, sprouts and gravy thoroughly before adding them to your platter.
  • Add the cheese before the toppings. Melting the Cheddar directly onto the chips creates a cheesy base without overcooking your Christmas leftovers.
  • Warm the cranberry sauce gently. You only need to loosen it enough to drizzle easily over the finished dish.
  • Assemble just before serving. Have all your toppings hot and ready before building the platter so the chips stay as crispy as possible.

Variations

  • Christmas Dinner, but Make It Chipmas

Christmas dinner leftovers are almost as good as the main event particularly when you turn them into loaded chips.

Chipmas Dinner brings together classic festive flavours without simply reheating another roast dinner. Crispy chips and melted Cheddar form the base, while turkey, stuffing and sprouts bring all the Christmas favourites.

The finishing touch is the combination of rich turkey gravy and sweet cranberry sauce, giving you a little bit of Christmas dinner in every loaded forkful.

  • The Perfect Way to Use Christmas Dinner Leftovers

If you’ve cooked for a crowd on Christmas Day, chances are there’ll be a few containers waiting in the fridge the next morning.

This recipe is designed to make the most of leftover turkey, stuffing, sprouts, gravy and cranberry sauce, so you can use whatever you have rather than starting again from scratch.

Just remember that previously cooked ingredients should be stored and reheated in line with food-safety guidance, and leftovers that require reheating should be piping hot throughout before serving.

  • Make Your Chipmas Dinner Your Own

One of the best things about Christmas leftovers is that everyone's fridge looks slightly different.

Got some leftover roast vegetables? Chop them into bite-sized pieces and add them to the platter. A few roast parsnips or carrots left? They can join the party too.

No turkey? Leftover cooked chicken can work instead. And if your family considers pigs in blankets non-negotiable, slice up any leftovers and scatter them over the cheesy chips.

Think of the recipe as a starting point and build your Christmas dinner loaded chips around whatever you've got left.

  • Make It Vegetarian or Vegan

No turkey? No problem. Chipmas Dinner works just as well with the leftovers from a vegetarian Christmas feast.

For a vegetarian version, swap the shredded turkey for crumbled leftover nut roast, slices of vegetarian Wellington or pieces of a meat-free roast. You can also pile on any leftover sage and onion stuffing, roast parsnips, carrots or Brussels sprouts for even more festive flavour.

Keep the melted mature Cheddar, making sure you choose a vegetarian-friendly cheese, and replace the turkey gravy with a rich vegetarian onion or vegetable gravy. Finish with the warm cranberry sauce as usual.

For a vegan version, leftover vegan nut roast or mushroom Wellington makes a great centrepiece in place of the turkey. Add crispy mushrooms, roasted chestnuts, vegan stuffing or any leftover roast vegetables you have in the fridge.

Swap the Cheddar for a melting vegan cheese and use vegan gravy, then finish with cranberry sauce, checking the labels of your chosen ingredients to make sure they're suitable for vegans.
