One potato, two potatoes, three potatoes...four – that's how many main varieties we use in our chips. There are three potato periods to look forward to throughout the year; with the farmer keeping a close eye on his crop to ensure it’s harvested at the peak of perfection.

Premiere potatoes are a 'first early' variety, planted from January to March and dug up from May to July. They have a yellow skin and flesh with a firm, slightly dry texture that's perfect for crunchy chips.

Morene is a 'second early', planted between February and May and harvested in late summer. Its mild flavour makes it another good chipper.

Pentland Dell and the well-known Maris Piper are 'maincrops', planted in April and in the sacks by autumn. Both these varieties have a pleasant, floury texture - all the right qualities.

As soon as the spuds have been carefully lifted, it's off to McCain HQ to be transformed into the parts they were born to play - from Home Fries to Potato Winners Lightly Spiced Wedges.
