McCain Sea Salt and Cracked Black Pepper Wedges with Tasty Roasted Peppers

Ingredients

  • 1 bag McCain Sea Salt and Cracked Black Pepper Wedges
    (Allow 135g per person)
  • 2 large red peppers, cut in half through the stalk
  • 150g cherry toms, halved
  • Handful black olives
  • 1 red onion sliced
  • 1 small ball mozzarella, torn into small pieces
  • Olive oil to drizzle

How to cook

Preheat the oven to 220C/430F/Gas Mark 7 and bake your Wedges for 18 minutes. Alternatively preheat the grill for 5 minutes at a medium high heat. Grill your Wedges for 12-14 minutes turning every now and again (for more details on cooking instructions see the back of your Wedges pack)

Preheat the oven 220oc. Gas Mark 7

Place the halved peppers on a solid oven tray, divide the remaining ingredients between the 4, season and drizzle with the oil.

Put the wedges in the top of the oven and the peppers on a lower shelf, cook for 18-20 mins. Serve as a light lunch or snack with a little salad.
