Honey Chicken Pan-Fried with Lemon, served with McCain Sweet Potato, crushed potatoes and Broccoli
Ingredients
- 400g McCain Sweet Potato with Rosemary & Garlic
- 4 chicken breast fillets, cubed
- 200g baby new potatoes
- 200g Broccoli
- 1 tbsp extra virgin olive oil
- 2 lemons
- 1 tsp dried rosemary
- 1 tbsp honey
- 2 cloves organic garlic, crushed
- Curl of butter
How to cook
Heat the oven to 240C/475F/Gas 9. Spread the McCain Sweet Potato evenly in a single layer on a baking tray and cook on the top shelf for 18 - 20 minutes
Boil the potatoes for 15 minutes and then crush gently with a fork and a curl of butter
Heat the oil in a large frying pan. Cut one of the lemons into thick slices and add to the pan with the garlic, chicken and rosemary
Increase the heat and season. Cook for 10 minutes until the chicken is browned and thoroughly cooked, with no pink meat
Steam the broccoli over a pan of boiling water for three to five minutes until tender
Squeeze the remaining lemon over the chicken, and stir in the honey. Simmer for one-two minutes
Serve immediately with the McCain Sweet Potato, crushed potato and steamed broccoli
