French style herby sausage casserole, served with Lightly Spiced Wedges
Ingredients
- 8 great herby sausages, grilled or oven roasted
- 2 tbs olive oil
- 1 red onion cut into wedges
- 1 clove garlic
- 300g baby plum tomatoes, halved
- 1 tsp fresh mixed herbs
- 200g puy lentils
- 200ml chicken stock
- 600g McCain Lightly Spiced Wedges (uncooked weight)
How to cook
Set oven to 200°C.
Roast the onions in olive oil for 15 – 20 mins then add the garlic, herbs,
halved baby plum tomatoes and roast for a further 10 mins.
Meanwhile, cook the lentils in boiling water for 30 mins until almost tender,
then drain and grill or roast the sausages until cooked through.
Mix the roast veg with the drained lentils, pour over the stock and simmer
for 10 mins to reduce the stock.
Serve the sausages on a bed of lentils and roasted veg with a side order of
McCain Lightly Spiced Wedges. (Follow on pack cooking instructions)
