Cider Roast Turkey with seasonal vegetables and Simply Gorgeous Roasting Potatoes
Ingredients
- 1 pack of McCain Simply Gorgeous Roasting Potatoes
- 2.5 – 3kg turkey, giblets removed and kept
- 225g stuffing
- 1 leek, trimmed and chopped
- 1 carrot, peeled and chopped
- 25g butter, softened
- 150ml dry cider
- 12 Brussel sprouts, to serve
- Fresh redcurrents, to serve (optional)
Gravy
- 50g plain flour
- 150ml dry cider
- 300ml chicken stock
How to cook
Preheat oven to 190C/fan 170C/gas 5
Wash and dry the turkey
Push the stuffing up and under the skin, securing it tightly underneath with a skewer
Weigh the stuffed turkey, then estimate the cooking time, allowing 40 minutes per kg [20 mins per lb]
Put the leek, carrot and giblets on the bottom of a large, heavy roasting tin in a single layer. Sit the turkey on top and coat the breast all over with the softened butter
Pour the cider into the tin, cover the turkey and tin with foil, then roast according to timings you have calculated. Keep checking the vegetables and if they look like they’re burning, add a splash of water or cider. With 30 minutes to go, remove the foil
To test if the turkey is ready, pierce the thigh – the juices should run clear if it is cooked
Take the turkey out and leave to rest on a chopping board for 30 mins
Turn oven up to 240C/ 475F/ Gas Mark 9. Cook McCain Simply Gorgeous roasts potatoes for 25 – 30 minutes, turning occasionally until crisp and golden
To make the gravy, drain the fat and vegetable juices from the tin into a jug, discarding the
vegetables and giblets. Place the tin on the hob on a low heat, scrape the bottom of the tin, then stir in the flour. Gradually re-add the hot juices, stirring all the while. Add the cider and chicken stock and stir
Meanwhile, cut the storks off the sprouts and boil for 7–10 minutes
Continue to bubble the gravy until it is reduced by half, strain into a jug, then serve with the turkey, vegetables and Simply Gorgeous roast potatoes
Garnish with a sprig of redcurrants if you like
