Baked salmon with McCain Sweet Potato, New Potatoes and Green Salad

How to cook
Season salmon fillets with black pepper and loosely parcel each one individually
in tin foil
Heat the oven to 240C/475F/Gas 9. Spread the McCain Sweet Potato evenly in a single
layer on a baking tray alongside the wrapped salmon fillets and cook on the top
shelf for the McCain Sweet Potato on a baking tray for 18 - 20 minutes.
Add new potatoes to boiling water in saucepan for 5 minutes [until tender] then
mix with butter
Remove salmon fillets from the tinfoil parcel and accompany with a serving of McCain
Sweet Potatoes, a spoonful of new potatoes and a handful of salad leaves drizzled
with olive oil and balsamic vinegar
