Grilled fillet of fresh salmon served with a dill and crème fraiche sauce, McCain Home Fries and steamed asparagus (Serves 4)

Ingredients 540g McCain Home Fries
4 x 150g salmon fillets
250g low fat crème fraiche
30g fresh chopped dill, plus extra sprigs
for garnish
2 tsp wholegrain mustard
1 lemon
1 tsp honey
½ cucumber, very thinly sliced for garnish
Asparagus, to serve 4 people
Lime wedges for garnish
Salt and pepper, to taste

Method

  1. Preheat oven to 220C/ 425F/ Gas Mark 7. Cook McCain Home Fries for 20 minutes, turning occasionally until crisp and golden.
  2. Grill the salmon fillet under a pre-heated grill for about 5 mins each side.
  3. Mix chilled crème fraiche with the chopped dill and mustard. Add the honey and lemon to taste and serve along side the hot salmon. Garnish with sprigs of fresh dill, a few pieces of thinly sliced cucumber and a wedge of lime.
  4. Steam the asparagus or blanch in boiling water for a few minutes and serve with the salmon and McCain Home Fries
