Fillet steak the Home Fries way

Balsamic & Chili marinated fillet steak with Roquefort cheese, McCain Home Fries & rocket salad (Serves 4)

Ingredients 540g McCain Home Fries
4 beef fillet steaks (180g-200g each)
2 tbsp chopped shallots
60ml balsamic vinegar
60ml olive oil
2 cloves garlic, sliced
1 small deseeded finely chopped red chilli
1 tbsp rosemary leaves, roughly chopped 1 tsp cracked pepper
4 x 20g chunks of Roquefort cheese
Fresh rocket and watercress, to serve
Olive oil and balsamic vinegar, to dress
Salt and pepper, to taste

Method

  1. Preheat oven to 220C/ 425F/ Gas Mark 7
  2. Put balsamic vinegar, olive oil, shallots, garlic, chilli, rosemary and pepper in a shallow dish. Mix well.
  3. Place steak in marinade for a minimum of 20 minutes. Steak can be marinated for hours in the refrigerator or even overnight.
  4. While the steak is marinating, spread 540g of McCain Home Fries on a baking tray and cook for 20 minutes turning every now and then until they are crisp and golden.
  5. Heat a griddle until very hot. (A griddle is a healthier way to cook meat, as you shouldn’t need to use any cooking oil. If you do, use a low calorie spray.) Cook the steaks for 4-5 minutes on each side for medium-done meat.
  6. Top the steaks with Roquefort cheese and melt under the grill.
  7. Serve with McCain Home Fries and a handful of watercress and rocket, drizzled in olive oil and balsamic vinegar.
